Flank steak – is best prepared using dry heat cooking methods like grilling, crockpot, or in the oven but it’s important not to overcook it. This lean cut is commonly cooked to medium-rare (130 to 135 degrees). The trick is to grill it over a very hot grill for a short time, then let it rest, and slice it against the grain. Slicing against the grain is especially important because otherwise, the muscle fibers will be very chewy. Popular dishes made with flank steak include Carne Asada and Beef stir fry. Cheese pairings include goat cheese, gorgonzola or Feta, Mozzarella, Gruyere, Provolone, Gouda or Edam.
