A portion of the leg, which is used for movement. Typically cut into cross sections called Shank Cross-Cuts which are braised to make flavorful, fork-tender dishes such as Osso Bucco. Osso Bucco is an Italian braised beef shank dish that pairs exceptionally with rice, or mashed potatoes and a glass of red wine.
