Skirt steak- has an intense beefy flavor, and is much heartier than flank steak. It does contain more tough muscles than flank steak, though, so chefs recommend this to be cooked to rare (120-130 degrees F) or medium rare (130-135 degrees F) for the most tender texture. Cut against the grain when slicing after all cooking methods. It is highly recommended to marinate and grill for fajitas or use for stir-fry, pan broiled/ skillet.
