Aunt DD’s Baked Potato Salad

Aunt DD’s Baked Potato Salad

      • 4 Russet Potatoes
      • 1/2 C Chopped Onion and Celery
      • 2 Hardboiled Eggs Peeled
      • 7oz Betsy Lantz Hot Sweet Mustard

DIRECTIONS:

Scrub potatoes thoroughly, and poke potatoes with a fork or knife

Microwave until soft (about 10 minutes) – turn potatoes over at 5 minutes

Cube potatoes when they are cool to handle

Add celery, onions, diced hardboiled eggs and potatoes to a bowl

In a separate bowl add 3 T. water and the 7oz of Betsy Lantz Mustard (water for thinning) this makes coating potatoes easier

Pour mustard mixture over the potatoes, celery, onions, and toss gently

Enjoy hot or cold – for some extra zing add some bacon, cheese, and paprika !
