Description
Also known as “boneless top chuck steak”, or a “Butler steak”. This cut comes from the top blade portion of the beef. Extremely tender, a well marbled and flavorful cut. Best prepared by grilling, pan broiled, skillet, sous vide, stir fry, skillet to oven, broiled or smoked. Cheese pairings include blue cheese, gorgonzola or Feta, Mozzarella, Gruyere, Provolone, Gouda or Edam.
