Loaded Pork Nachos

- 1lb Ground Pork
- 1 Packet Taco seasoning OR 1 tsp Chili powder
- 1 Bag Tortilla Chips
- 2 Cloves Fresh Minced Garlic
- 1/2 Cherry Tomatoes halved
- 1/4 tsp Salt
- 1/8 tsp ground black pepper
- 1/2 cup sliced black olives
- 2 cups Shredded Pepper Jack Cheese
- 1/2 cup Spring Onions
- 3 Jalapenos (optional)
- 1 TBSP Vegetable Oil
- 1/2 Red Pepper Diced
- 1/2 Green Pepper Diced
- 1/2 Sweet Onion Diced

DIRECTIONS:
Preheat oven to 400 degrees
Brown pork in skillet on stove top with chili or taco seasoning with vegetable oil.
Add halved cherry tomatoes, and minced garlic to the skillet.
Let simmer until the tomatoes have began to wrinkle.
Remove from heat.
Dump nacho chips on sheet pan, sprinkle the pork and tomato mixture over the chips , add salt and pepper to taste.
Add the diced onions, jalapenos, black olives, red and green peppers to the top of the sheet pan.
Cover sheet pan in the Pepper Jack Cheese.
Bake on 400 for 6-8 minutes until cheese is fully melted.
Remove and top with green onions.
Top with Sour Cream and serve with Fresh Guacamole.
